Elaboration:

  • Harvesting by hand except 2-3 members that carry out mechanized harvesting
  • Elaboration of each variety separately (establishing dates to do it),
  • Stainless steel taks of 100.000 liters.
  • Cold pre-fermentative maceration.
  • Aging: Concrete deposits covered with 16.000 liters of resin.
  • Bottling: Clarified, Stabilized and Filtered
